Tasting Notes

Bright garnet wine with bright garnet hues give way to a lifted fruit driven nose alive with brandied Bing cherry, strawberry preserve and mulled blueberry nuances adding to light sage and mulling spices. The palate is clean, light to medium bodied with all the lovely red berry notes coming through here too, plus a touch of additional dried tobacco and mild earthiness. The acidity is restrained as is the influence of oak. The dry finish leaves the palate cleansed. Enjoy with grilled meats and veggies, ratatouille, burgers (smothered with blue cheese), tomato sauces, pastas, stews, eggplant, patés and even dark chocolate. Likely perfect with a fireplace, your mate and a quiet night in.

Vineyard Data
  • Harvested exclusively from the estate vineyard in Jordan, ON - sub appellation 20 Mile Bench
  • 15 year old vines grown on thin clay soils with escarpment limestone rock beneath
  • 2008 – cool year hence acidity nicely retained in fruit
  • Low yields with tiny berries resulting in 20.2 Brix, 12.0g/L T.A. and 3.0 pH
Winemaking Data
  • Cool fermented in stainless steel over 1 week with selected yeast pumping over once daily
  • Very little time in oak to keep wine fruit forward and pronounced
  • no blending or fining required

Baco & Bacon from @SueAnnStaff was magnificent. The 08 Staff Baco with crispy, smoky bacon just beautiful. Wow.
