Reds
Long temperate growing condition pronounce the fruit and the acidity. Ideal grape variety are those with long growing seasons, and thick skins to protect the fruit. Tannin and color are products of the grape skins and oak aging. Pairs well with red meats, pizza, pasta, dark chocolate and strong cheeses.
Whites
From pale yellow to a golden straw colour. A wide variety of fruit flavors are represented in white wines. Lychee nut, peaches and tropical fruits are all common. Since white wine is made with minimal skin contact, there is almost no tannin associated with the grapes. Pairs well with seafood, white fish, grilled chicken, creamy sauces, goat cheese.
Icewines
Rich aromas and flavours of ripe tropical fruits such as lychee, papaya and pineapple. Sweet with firm backbone of acidity making them perfectly balanced. Enjoyed as a dessert on their own or with desserts. Perfect complement for rich, strongly flavoured foods such as foie gras and aged blue cheeses. Also used as a "dosage" for Sparkling Wine or cocktails.
